Questa è in assoluto la migliore ricetta delle Polpette Svedesi che abbia provato! Sono molto gustose e sane. Preparate con ceci, avena e funghi. Queste Polpette sono incredibilmente deliziose, vegane, senza glutine e possono essere fatte senza soia e noci! Sono accompagnate da un purè e una salsa vegana.

Il nostro mondo è molto vario e con svariate culture. Ogni Paese ha le sue tradizioni e soprattutto cibi diversi! Amo ricreare le ricette che provengono dai diversi Paesi, finora ne ho provate tante, come i Cinnamon Roll che sono tipici della Svezia, oppure il Babka al Cioccolato Vegano tipico dolce polacco.

Se siete grandi frequentatori dell’Ikea conoscerete sicuramente queste deliziose polpette! Non vado spesso all’Ikea perché non è vicino casa mia, ma ogni volta che ci vado prendo sempre le polpette! Purtroppo questo non è un piatto vegano, quindi adesso ripiego sulle polpette di ceci (molto buone anche queste). Ma è da quando sono diventata vegana che avevo il desiderio di “veganizzare” questo piatto! Con queste polpette conquisterai anche i tuoi amici non vegani!

Come sono fatte le Polpette Svedesi

Le Polpette Svedesi o Köttbullar, sono un tipico piatto appunto svedese. Si differenziano dalle polpette delle altre culture per via delle varie spezie che gli svedesi utilizzano. E sono proprio tutte queste spezie che gli donano un sapore unico!

Inoltre le polpette hanno un diametro relativamente più piccolo in confronto alle altre. Vengono per di più accompagnate da una salsa, purè di patate, cetrioli sottaceto e di solito anche da una marmellata.

Ma che ingredienti ci sono in queste Polpette Svedesi?

Ti posso assicurare che questo piatto è facilissimo da preparare! Per realizzare solo le polpette avrai bisogno di pochi ingredienti (la metà sono praticamente spezie!). Ho realizzato anche un video di come le preparo che ti consiglio di guardare.

Polpette:

  • ceci: anche i fagioli neri vanno benissimo
  • funghi
  • cipolla
  • semi di lino macinati: fondamentali per avere la giusta consistenza
  • noci: se si ha qualche allergia si possono sostituire con i semi di zucca
  • avena: (senza glutine se necessario)
  • salsa di soia: salsa Tamari in alternativa
  • aglio in polvere
  • paprica, cumino, pepe nero e sale
  • acqua

Step 1: prep delle polpette Polpette Svedesi

  • Per prima cosa se utilizzi i ceci crudi ricordati di metterli in ammollo il giorno prima e di cucinarli almeno 1 ora prima di cominciare a cucinare.
  • Unisci i semi di lino macinati all’acqua e alla salsa di soia, mescola bene e lascia da parte per una quindicina di minuti.
  • Trita la cipolla e taglia i funghi grossolanamente. Aggiungi i funghi in un mixer e tritali per circa un minuto. Riscalda dell’olio in una padella e aggiungi i funghi, la cipolla tritata, il sale e le spezie. Fai saltare il tutto per qualche minuto.
  • Nel mixer frulla le noci e i fiocchi d’avena, dovranno diventare una sorta di farina. Aggiungi al mixer i ceci (o i fagioli) e continua a frullare (gli ingredienti dovranno essere amalgamati ma non a purè).
  • In una ciotola unisci il mix di ceci, i funghi, sale, se necessario, e infine la mistura di semi di lino. Mescola tutto bene, prima con un cucchiaio poi con le mani.
  • Forma delle palline di piccola o media misura e adagiale su una placca da forno rivestita da carta forno. Inforna a 180° per circa 25-30 minuti (girale a metà cottura).

Step 2: la salsa vegana

Sciogli il burro vegano in una padella, aggiungi l’amido di mais e mescola. Versa l’acqua e il latte di avena (o un altro tipo) non zuccherato. Aggiungi la salsa di soia, la mostarda e mescola. Infine aggiungi un po’ di aglio in polvere, pepe e aggiusta di sale se serve. Mescola per un paio di minuti, fino a quando la salsa non si addensa.

Step 3: prepara il purè

Prepara le patate prima delle polpette svedesi. Sbuccia e taglia a cubetti le patate. Aggiungile in una pentola e coprile con dell’acqua, aggiungi il sale. Falle bollire per circa 15 minuti, le patate devono essere soffici ma non friabili. Togli l’acqua dalle patate e aggiungi tutti gli altri ingredienti. Con una forchetta, o uno schiaccia patate, schiaccia le patate. Non usare un mixer o il frullatore a immersione!

Ingredients

Polpette Vegane

  • 2 cucchiaini semi di lino macinati
  • 2 cucchiaini acqua
  • 2 cucchiaini salsa di soia o tamari
  • 200 g funghi
  • 150 g di ceci già cotti o fagioli neri
  • 40 g di noci o semi di zucca
  • 50 g di fiocchi d'avena (senza glutine se necessario)
  • ½ cucchiaini di aglio in polvere
  • pepe nero
  • paprica dolce
  • cumino
  • sale

Salsa Vegana

  • 2 cucchiai di burro vegano
  • 2 cucchiai di amido di mais
  • 200 ml di acqua
  • 100 ml di latte di avena senza zuccheri
  • 1 cucchiaio di salsa di soia o tamari
  • 1 cucchiaino di mostarda
  • ½ cucchiaino di aglio in polvere

Purè di Patate

  • 5 patate medie
  • 60 ml di latte di avena senza zuccheri
  • 1 cucchiaio di burro vegano
  • sale e pepe

Instructions

Notes

Conservazione: le polpette si conservano in frigo per circa 2 giorni. Però tieni le polpette e la salsa separate! Altrimenti le polpette diventeranno troppo morbide. Puoi anche congelarle, sempre separate dalla salsa. Una volta riscaldate e quindi pronte da servire versa la salsa sulle polpette.

Vegan Swedish Meatballs (GF option)

This is by far the best Swedish Meatball recipe I have tried! They are very tasty and healthy. Prepared with chickpeas, oats and mushrooms. These Meatballs are incredibly delicious, vegan, gluten-free and can be made soy-free and nut-free! They are accompanied by a puree and a vegan sauce.

Our world is very various and with different cultures. Each country has its traditions and above all different foods! I love to recreate the recipes that come from different countries, so far I have tried many, such as the Cinnamon Roll which are typical of Sweden, or the Babka with Vegan Chocolate, a typical Polish dessert.

If you are a big fan of Ikea, you will surely know these delicious meatballs! I don’t go to Ikea often because it’s not near to my house, but every time I go I always get swedish meatballs! Unfortunately this is not a vegan dish, so now I refold on chickpea meatballs (these are also very good). But it is since I became vegan that I had the desire to “veganize” this dish! With these meatballs you will conquer even your non-vegan friends!

How are Swedish Meatballs made?

The Swedish Meatballs or Köttbullar, are a typical Swedish dish. Theyare different from meatballs of other cultures due to the various spices that the Swedes use. And it is all these spices that give it a unique flavor!

Furthermore, the meatballs have a relatively smaller diameter compared to the others. They are also accompanied by a gravy, mashed potatoes, pickled cucumbers and usually also a jam.

But what ingredients are in these vegan meatballs?

I can assure you that this dish is very easy to prepare! To make just the meatballs you will need a few ingredients (half are practically spices!). I also made a video of how I prepare them that I recommend you to watch.

Vegan Meatballs:

  • chickpeas: black beans are fine too
  • mushrooms
  • onion
  • ground flax seeds: essential for having the right consistency
  • nuts: if you have any allergies, you can replace them with pumpkin seeds
  • oats: gluten-free if needed
  • soy sauce: Tamari sauce as an alternative
  • garlic powder
  • paprika, cumin, black pepper and salt
  • water

Step 1: prep the meatballs

  • First of all, if you use raw chickpeas, remember to soak them the day before and cook them at least 1 hour before starting to cook.
  • Add the ground flax seeds to the water and soy sauce, mix well and set aside for about fifteen minutes.
  • Chop the onion and chop the mushrooms grossly. Add the mushrooms to a mixer and mix them for about a minute. Heat some oil in a pan and add the mushrooms, chopped onion, salt and spices. Blow it all up for a few minutes.
  • In the mixer, blend the walnuts and the oat flakes, they must become a kind of flour. Add the chickpeas (or beans) to the mixer and continue to blend (the ingredients must be blended but not pureed).
  • In a bowl combine the chickpea mix, mushrooms, salt if needed, and finally the flaxseed mixture. Mix everything well, first with a spoon then with your hands.
  • Shape small or medium-sized balls and place them on a baking sheet lined with parchment paper. Bake at 180 degrees for about 25-30 minutes (turn them halfway through cooking).

Step 2: the vegan gravy

Melt the vegan butter in a pan, add the corn starch and mix. Pour in the water and unsweetened oat milk (or another type). Add the soy sauce, mustard and mix. Finally, add a little garlic powder, pepper and season with salt if needed. Stir for a couple of minutes, until the sauce became thick.

Step 3: make the puree

Prepare the potatoes before the Swedish meatballs. Peel and dice the potatoes. Add them to a saucepan and cover them with water, add the salt. Boil them for about 15 minutes, the potatoes should be soft but not crumbly. Remove the water from the potatoes and add all the other ingredients. With a fork or potato masher, mash the potatoes. Do not use a mixer or hand blender!

Notes

Storage: the meatballs can be kept in the fridge for about 2 days. But keep the meatballs and the sauce separate! Otherwise the meatballs will become too soft. You can also freeze them, always separated from the sauce. Once heated and ready to serve, pour the sauce over the meatballs.
