Falafel di Fave (vegan+gf)

Questi Falafel di fave sono diventati la mia nuova ossessione! Sono facilissime e super gustose, sono molto sane e senza glutine, perfette da preparare in anticipo per avere sempre un pranzo leggero. Si possono congelare per essere poi pronte in pochissimo tempo.

I Falafel sono uno dei miei piatti preferiti. Sono pieni di nutrimenti, tra cui fibre e proteine. Li preparo spesso la domenica per avere sempre un pranzo o una cena veloce. Normalmente li preparo con i ceci secchi, ma questa volta ho voluto provare con le fave. Facendo delle ricerche ho scoperto che in Egitto non preparano i falafel con i ceci, ma bensì con le fave. E devo dire che mi sono piaciute tantissimo, sono venute davvero gustose e con la salsa al burro d’arachidi sono ancora più buone.

Probabilmente la cosa che amo di più dei falafel è che si possono servire in diversi modi: come piatto principale, nelle insalate o come contorno. Io di solito le consumo da sole con qualche salsa e verdura come contorno, e ovviamente le tortillas (o pitas). Ma ovviamente si possono mangiare in tantissimi altri modi!

Come preparare i Falafel di Fave

Sul mio blog puoi trovare altre ricette dei falafel, e questi non si preparano in modo tanto diverso. Invece dei ceci ho usato le fave, assicurati di metterli a mollo il giorno prima.

  • In un robot da cucina aggiungi le fave insieme alla salsa tahina, la farina di ceci, la cipolla e l’aglio (se vuoi), il prezzemolo, qualche foglia di menta, la paprika, il cumino, il sale e il pepe. Mixa fino a ottenere un composto grossolano, non dev’essere un purè. Versa il composto in una ciotola.
  • Aggiusta di sale e pepe se serve. Trasferisci il composto in frigo per 30 minuti.
  • Una volta che il composto sarà solido, forma delle palline della stessa misura. Riscalda un po’ di olio in una padella e posiziona i tuoi falafel nella padella. Cucina per circa 8 minuti, girali di continuo in modo che siano ben cotti da tutti i lati.
  • Posiziona i falafel di fave su una carta assorbente, in modo che non siano troppo unti.
  • Servi i falafel con la salsa al burro d’arachidi e delle verdure.

Puoi anche sostituire la salsa al burro d’arachidi con altre salse che trovi sul blog, come la salsa tahina o del semplice ma gustoso hummus di ceci. Se non vuoi friggere basta che li metti in forno a 200°C per circa 20-25 minuti.

Come conservare i Falafel di Fave

I falafel si possono conservare in frigorifero in un contenitore ermetico per circa 5 giorni. Per riscaldarli basta metterli in forno a 180°C per circa 10 minuti.

Per congelarli invece non devono essere cotti. Posizionali in un contenitore ermetico ricoperto da carta forno, distanziali tra loro per evitare che si attacchino. Possono stare in freezer per circa 4 mesi. Per cucinarli basta uscirli qualche ora prima dal freezer e lasciarli scongelare a temperatura ambiente. Poi cucinali come descritto nella scheda sotto.

Ingredients

Falafel

  • 120 g fave in ammollo tutta la notte
  • 1 cucchiaio salsa tahina
  • 1 cucchiaio e mezzo farina di ceci
  • 1 cipolla piccola o mezza cipolla
  • 1 mazzetto di prezzemolo
  • qualche foglia di menta
  • paprika, sale e pepe
  • olio di girasole per friggere

Salsa al burro d'arachidi

  • 4 cucchiaini burro d'arachidi
  • 2 cucchiaini salsa di soia
  • 2 cucchiaini sciroppo d'agave
  • 1 cucchiaino olio di girasole o di sesamo
  • succo di mezzo limone
  • un pezzetto di zenzero fresco grattugiato
  • acqua fino a raggiungere la consistenza desiderata

Instructions

Salsa al burro d'arachidi

  • Unisci tutti gli ingredienti della salsa in un frullatore e frulla fino a quando non risulterà cremosa. Aggiungi dell'acqua fino a raggiungere la consistenza desiderata.

Notes

Se non vuoi friggere basta che li metti in forno a 200°C per circa 20-25 minuti.

Fava beans Falafel (vegan+gf)

These fava beans falafels have become my new obsession! They are very easy and super tasty, they are super healthy and gluten-free, perfect for a prep meal to always have a light lunch. You can freeze them to be ready in no time.

Falafel is one of my favorite dishes. They are full of nutrients, including fiber and protein. I often prepare them on Sundays to always have a quick lunch or dinner. Normally I make them with dried chickpeas, but this time I wanted to try them with fava beans. Doing some research I discovered that in Egypt they do not make falafel with chickpeas, but with fava beans. And I must say that I loved them, they came out really tasty and with the peanut butter sauce they are even better.

Probably the thing that I love about falafels is that they can be served in different ways: as a main course, in salads or as a side dish. I usually eat them alone with some sauce and vegetables as a side dish, and of course tortillas (or pitas). But of course you can eat them in many other ways!

How to make Fava Beans Falafel

On my blog you can find other falafel recipes, and these are not prepared in the same way. Instead of chickpeas I used fava beans, make sure you soak them the day before.

  • In a food processor, add the fava beans with the tahini sauce, chickpea flour, onion and garlic (if you want), parsley, a few mint leaves, paprika, cumin, salt and pepper. Mix until you get a coarse mixture, it must not be a purée. Pour the mixture into a bowl.
  • Season with salt and pepper if needed. Transfer the mixture to the fridge for 30 minutes.
  • Once the mixture is firm, form balls of the same size. Heat some oil in a pan and place your falafel in the pan. Cook for about 8 minutes, turn them continuously so that they are well cooked on all sides.
  • Place the fava beans falafel on a paper towel so they aren’t too greasy.
  • Serve the falafel with the peanut butter sauce and vegetables.

You can also replace the peanut butter sauce with other sauces you find on the blog, such as tahini sauce or simple but tasty chickpea hummus. If you don’t want to frythe balls, just put them in the oven at 200°C for about 20-25 minutes.

How to store Fava Beans Falafel

Falafels can be stored in the refrigerator in an airtight container for about 5 days. To heat them, just put them in the oven at 180°C for about 10 minutes.

To freeze them, however, they must not be cooked. Place them in an airtight container covered with parchment paper, space them apart to prevent from sticking together. They can stay in the freezer for about 4 months. To cook them, just take them out of the freezer a few hours earlier and let them thaw at room temperature. Then cook them as described in the card below.

  • 1 tbsp tahini sauce
  • 1 ½ tbsp chickpeas flour
  • 1 small onion or half onion
  • 1 garlin cloves optional
  • 1 bunch of parsley
  • a few mint leaves
  • paprika, salt and pepper
  • sunflower oil for frying

Peanut butter sauce

  • 4 tsp peanut butter
  • 2 tsp soy sauce
  • 2 tsp agave syrup
  • 1 tsp sunflower or sesame oil
  • juice of half a lemon
  • a piece of fresh grated ginger
  • water until the desired consistency is reached

Instructions

Falafel

  • In a food processor, add the fava beans with the tahini sauce, chickpea flour, onion and garlic (if you want), parsley, a few mint leaves, paprika, cumin, salt and pepper. Mix until you get a coarse mixture, it must not be a purée. Pour the mixture into a bowl.

  • Combine all the sauce ingredients in a blender and blend until creamy. Add water until you reach the desired consistency.

Notes

If you don’t want to frythe balls, just put them in the oven at 200°C for about 20-25 minutes.
